In the first issue of 2015, we ask an important question: What’s in a name? In the case of authentic Fontina cheese from Italy, the answer is: Everything! PDO Fontina d’Aosta is such a distinctive cheese ... the creamy but piquant flavor of the cheese, the soft texture, and the smooth melting properties combine to create something that is truly special, and not necessarily replicable. If you have ever been treated to a risotto with ham and Fontina, you know what I am talking about. The reputation of a great cheese such as Fontina deserves to be upheld and defended against copies that don’t possess the same qualities, and rob consumers of the opportunity to taste the authentic product. The way to combat the dilution of a great brand of cheese is to simply only sell the original and forget the potential copies bearing the name in some fashion.
